From the Cidery: Five types of heirloom apples were carefully blended with French & English cider varieties to produce our flagship cider. Partially fermented with wild Northwest yeasts, this cider has a subtle complexity that links to our local terroir making it truly unique. Swirled in the glass it releases intriguing aromas and enjoyable subtleties. Complex apple, notable acidity and minerality, with darker bitterness and mild tannic astringency. A difficult cider to produce, but an easy one to enjoy.
Pair it with: A 'Swiss Army Knife' of ciders for pairing with food. This cider pairs well with food. Cheese, meat, pasta, veg. No problem. Guten appetit! Or just drink your dinner. Drink your cider with food. It is delicious.
