A blend of foraged pears, about 1/3 seedling pears and 2/3 abandoned orchard pears.
Seedling pears tend to be similar to seedling apples, they are often spitters with high acid and can be extremely tannic.
The blend with dessert pears makes for a more complex flavor than other perries.
My favorite way to drink it is with a creamy earthy cheese (I love it with Cow Girl Creamery's Mt Tam!).
Barrel aged in neutral oak for 10 months. Organic cane sugar added for bottle ferment only. No sulfur added.
