Bauman's collects their allotment of Airlie Red from their native orchard at Rainshine Farm, and every year releases one of the most stunning single varietal Airlie Red ciders. \u003c\/p\u003e\n\u003cp\u003eThis bottle is from the 2025 vintage\/harvest, which their standard \u003cmeta charset=\"utf-8\"\u003e\u003ca href=\"https:\/\/www.pressthenpress.com\/products\/baumans-cider-mountain-rose-single-varietal-cider-oregon-portland\" title=\"Bauman's Cider - Mountain Rose | Oregon Cidery\"\u003eMountain Rose cider\u003c\/a\u003e won the silver medal for Red-Flesh Dry cider category in the Northwest Cider Cup. With this bottling\/batch, the juice was fermented in an Amphora. \u003c\/p\u003e\n\u003cp\u003eAmphora pots made of clay have been used to make and transport wine for 1,000s of years (as many as 8,000 years according to old \u003cmeta charset=\"utf-8\"\u003e\u003cspan\u003earchaeological records). Still used with regularity in many wine making regions around the world for it's host of benefits, including temperature control in warmer climates where the Amphora pots can be buried in the ground to keep cooler. \u003c\/span\u003e\u003cspan\u003eModern wine makers are increasingly experimenting with clay Amphora for fermentation and bulk aging of wine and cider. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAmphora \u003c\/span\u003ecan be thought of as a middle ground between steel and oak or wood barrels. Stainless steel allows for an oxygen-free environment which limits any wild or unwanted flavors into the cider. Oak, on the other hand, allows for ample oxygen to reach the juice, while the wood’s tannins can also affect the aromas and flavors of the cider.
