This sparkling Methode Traditionnelle cider from Dragon's Head Cider is made from primarily Newtown Pippin apples with a bit of Airlie Red apples. Finished using the labor intensive Méthode Traditionnelle process in which the cider undergoes secondary fermentation in the bottle, creating tiny bubbles and spent yeast (lees) that are collected in the neck of the bottle and disgorged. Sparkling and perfect for celebratory cheers! This cider is dry, with strong acid and medium tannins. Full flavor with some tart citrus (lemon juice and lemon peel notes), ripe apple skins, and a soft white-grape wine-like presence.
