This cider was made \u003cmeta charset=\"utf-8\"\u003ewith a field blend of Northwest Greening, Rome Beauty, Cinnamon Spice, and unknown sweet apples - harvested and fermented in 2020. \u003c\/div\u003e\n\u003cdiv class=\"wine-info\"\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv class=\"wine-info\"\u003eModerately complex. Very slightly carbonated (nearly still). Lightly boozy aromas with hints of stone fruit and vanilla. Dry with plus tannins, bright apple, a touch sour, loads of citrus, and  hints of vanilla and herbaceous notes. Their ciders are all made with locally sourced fruit and honey from San Diego County - very rare amongst cideries in the area, most of which primarily use juice brought in from near and far. Dave and his family forage apples and pears and help manage several orchards throughout San Diego County. The many mountains and canyons just east of San Diego on the way to Julian, California are an abundant source of interesting fruit. The unique growing conditions of these mountains often result in higher levels of acid as well as higher sugar content (and thus higher alcohol). Dave uses natural fermentation methods (wild fermentation via native yeast) on the fruit for all of his ciders.
