A traditional unfiltered, wild yeast (spontaneously fermented by ambient native yeasts) sidra natural (natural cider). A blend of native Asturian apple varieties and imported Normandy bitter varieties reduces the typical high acidity somewhat and features a modest tannic bite.
Native Asturian apple varieties: Raxao, Fuentes, Blanquina (sharp); Carrio (semi-sharp); Clara (bittersharp).
Normandy apple varieties are bittersharp and bittersweet.
