Flavor Profile: I tend to think of this as a 'Baby Heritage' cider. A beautiful gold color with a light scent lent from the wild yeasts lend a natural touch; Like driving through the country with your windows down.
The dance-y little bubbles on the tongue led our friend Pink to declare “Champagne, notes of Apple!” Sounds about right to us.
Bright vanilla and honey, lending sweetness & some lemon grass with a quick tannic finish. Yes.
You wanna know if you got a good cider? Let it warm up and taste the flavor profiles develop and change. The ideal temperature range is between 45° F and 65° F (55° F being midpoint), though this isn't an exact science. This IS CIDER.
Pair it with: Food masher! Pair this up with Kimchi, Porkchops and a green salad with cherries and goat cheese. I did. That worked out just fine! Drink your cider with food. It is delicious.
