The Johanna Cécillon Estate has 14 hectares of cider apple orchards in northeastern Brittany, France - in the communes of Trédias and Sévignac. Comprised of nine different orchards , which were once inhabited by Gallic tribes known as the Coriosolites of the Armorican confederation. They are hilly, composed of meadows and hedgerows. The old orchard plots are accessible via sunken roads and old paths bordered by granite stone walls. More than twenty different varieties of sweet, bittersweet, bitter, and tart apples are harvested by hand each year.

The orchards are all certified organic agriculture (AB) and biodynamic agriculture (Demeter). All fruit is harvested from September through December, and allowed to sit until peak ripeness before pressing. Naturally fermented, with no added sulfites or other preservatives.
