Normandy and Brittany are the two regions in France with long traditions of making cider and perry (poiré), dating back centuries. French ciders are often characterized by the unique method of keeving, a technique that involves adding a natural enzyme to the pressed juice that binds to the proteins and deprives the yeasts of nutrients so that the fermentation is halted before fermenting all the way to dry. The result is a naturally sweeter cider that is typically lower in alcohol levels.
