Barmann Cellars' Queen of the Underground is a quince cider more than 4 years in the making. A must try for quince lovers.
This cider was originally released in 2023, featuring a blend of 70% quince and 30% cider apples. The original blend included Arkansas Black, Kingston Black, Karmijn de Sonneville, Kings, and Tsugaru apples. The centerpiece to the blend is estate grown Quince from the Barmann family's farm, fermented in new American Oak.
Quince from of the three subsequent harvest seasons - 2023 through 2025 - was fermented and then blended into what remained from the original release. That makes this cider a 4-year solera method, and increased the quince to more than 90% of the overall blend.
Tasting Notes: Dry to slightly off-dry. Very light tannins (medium-minus), and a pleasant mouthwatering acidity (medium-plus). Soft petilant bubbles, with a light creaminess to the body. Juicy, clean, and with loads of glorious quince leading the profile. Floral with notes of lemon peel. Candy like quality to it. Crisp minerality.
