Finnriver Farm & Cidery's Fire Barrel cider is a barrel-aged cider made with a blend of traditional bittersweet cider apple varieties. A long-time favorite cider of ours at Press Then Press, the latest vintage (released in Spring 2025) is as good as ever. This cider is tasting phenomenal now, and has considerable aging potential.
Made from a blend of 100% organically grown cider apples grown on Finnriver's own orchard. Apple varieties include: Chisel Jersey, Brown Snout, Harry Master’s Jersey, Medaille d’Or, Frequin Rouge, Nehou and Yarlington Mill. Fermented slowly through the winter - the cool fermentation temperatures allow for development of robust esters. Aged in oak barrels after fermentation, which brings the cider balance and shape, and melds the apple characteristics with the warm and caramel whiskey notes.
Tasting Notes: Vaporous woody spice leads the nose into a caramel cream soda with a light and gently acid mid-pallet followed with the classic bittersweet apple tannin closure- bitter, leather, astringent, with a phenolic finish. The notes of leather, and dark fruit, and spicy heat are archetypal of these varieties of apples.
After chilling, allow the cider to warm slightly and serve; we enjoy Fire Barrel in a Belgian style tulip glass. Try it with roasted pork, cured meats, smoked cheeses or any other hearty, savory nosh.
CIDERMAKER NOTES: This cider is fermented slowly through the winter. Cool temperatures allow for development of robust esters. The apples themselves are potent with tannins/polyphenols and they bring a depth and quality to this ferment different from the others in our cidery.
Founded in 2008, Finnriver produces ciders that range from apple-forward orchard blends to innovative fruited and botanical ciders. Fire Barrel is a longtime favorite or ours, and this year's release is no exception. Having been released year after year, we only wish we'd kept previous vintages in our cellar for comparing the nuances that each year's harvest bring to this cider. Made from 100% organic estate grown apples, fermented slow through the winter, Fire Barrel drinks slightly off-dry with notes of fresh apple, barrel in nice balance with wood and vanilla notes, some citrus pith and twiggy bitterness. The finish is full of fresh apple skins and tannins.
