Presque Isle Farm Cider - Giganticus Maximus Keeve (750 mL)
Presque Isle Farm Cider - Giganticus Maximus Keeve (750 mL)
Presque Isle Farm Cider's Giganticus Maximus Keeve is a sweet cider from PIF's Dragon Series of limited, small batch ciders. An absolute treat. Made from a blend of many of our absolute favorite cider apples, and keeved - a traditional French cidermaking process that preserves sweetness and softens tannins.
The apple blend consists of 40% Brown Snout, 40% Golden Russet, 10% Kingston Black, 10% Dabinett. Fermented spontaneously in stainless steel with the native yeast living on the fruit. This cider is keeved to preserve a natural residual sweetness, soften tannins, and build a lovely carbonation. Keeving is a traditional cider method particularly associated with the Normandy region of France but also practiced in the West Country of England.
Tasting Notes: This cider is sweet and rich. The bittersweet fruit dominates the palate and aromatics of fall orchards and caramelized apples flood the nose. Sweet with medium-to-plus tannins, softened nicely by the keeving and the residual sweetness. Rich, bittersweet apples with light notes of brown sugar, sweet lemon lime, apple skins, and fresh juice. Delightful stuff.
The Dragon Series is a collection of unrestrained, intense, and wild ciders. Inspired by traditional West Country English ciders with their bold tannin and robust flavors, these ciders seek to evoke a sense of fantasy. (**Label artwork by Dion & Molly's son, Sawyer J. Stepanski**)
About PIF Cider: Presque Isle Farm (pronounced: Preh-sk Aisle) is a fantastic cidermaker from Northern Michigan. Located on the shores of Lake Huron in the Northeast corner of Michigan's Lower Peninsula, PIF is a labor of love owned & operated by Dion & Molly Stepanski - partners in business and in life. The cidery was launched as an extension of their growing organic farm in Alpena, Michigan. PIF's focus is on English style cider - made with apples sourced from small farms across northern Michigan. They use a combination of cider-specific apple varieties, classic American apples, and wild foraged apples. Their cidermaking process focuses on minimal intervention and naturally fermented ciders. PIF's ciders are made in the traditional English and New England style and focus on cider-specific apples that can bring a complexity equal to wine.
