Cyril Zangs - Ciderman (330 mL)
Cyril Zangs - Ciderman (330 mL)
Cyril's ciders are blends made from amongst sixty-nine varieties of apples grown on high-stem orchards ranging from fifteen to sixty years old. He grows apple varieties ranging from classic French cider bittersweets, to sweet, to tart - with an aim to make well balanced blends worth enjoying and aging. The fruit is all harvested from the tree, by hand, between October and mid-December when it's ripe. The apples are separated by variety and stored in the cider barn for up to six additional weeks until the apples have reached peak ripeness.
As the apple varieties ripen, they are sorted to achieve balance across multiple cider blends that Cyril produces annually. Consistent with traditional French cider making practices, the pressed juice is then left to go through a natural (wild/native yeast) fermentation, with occasional rackings throughout a slow and cold 6 months long fermentation process. The unfiltered cider is bottled with no sulfites added and stocked horizontally for two to three months to capture the sparkle.
About Cyril Zangs: After a career as a wine sales rep in Paris, Cyril decided to go back to native Normandy with his family. All of his products are made from apples, about 32 different varieties, picked on the tree, not from the ground where they already started the process of rotting. The apples are then aged whole in small wooden crates for up to two months before being crushed, pressed, and then transferred to stainless steel tanks where the fermentation starts. They are then bottled while fermenting and placed on the pupitres (the racks used for riddling) for up to a year. No yeasting, no filtering, no sulfur added.
