Mount Diablo Cider's Wickson is a single-varietal cider made 100% from biodynamic Wickson Crabapples from Anderson Valley, California. The apples are hand harvested, crushed, pressed and wild fermented from naturally present native yeasts.
Multiple rackings are performed to reduce yeast and nutrient content - the keeving method common in French ciders, but rare for tart, acid forward apples. This process allowing for a slow fermentation that enhances complexity and character. Unfined and unfiltered, the cider is bottled before primary fermentation completes, creating a naturally pétillant cider with a touch of residual sweetness.
Tasting Notes: Great aromatics - fresh quince is bold on the nose with hints of wood and coastal sea spray. Lightly effervescent and with considerable residual sweetness. Drinks Semi-Dry to Semi-sweet but with complexity and acidity that balances is very well. Finishes dry. Refreshing with an intriguing amount of quince notes for a cider without any quince in it. Fresh, tart apple, apple skins, floral, dried pineapple, meyer lemon, and a crisp minerality.
