Durham Cider - A Tribe Called Quince 2020 (750 mL)
Durham Cider - A Tribe Called Quince 2020 (750 mL)
Durham Cider's A Tribe Called Quince is a natural cider made by co-fermenting apples, pears, and quince.
Made with a blend of apples (including bittersharp, bittersweet, and dessert apples), pears, and quince. The quince and some of the apples are allowed to macerate prior to pressing. Spontaneously fermented between two different batches that are blended just a couple days before bottling. Bottled prior to fermentation completing for a Pet-Nat sparkle. This batch of this fan favorite cider is dry with medium-plus to high tannins and medium-plus acidity. The modest percentage of quince still leads the flavor profile, with additional tasting notes of pineapple, apple skins, floral, lemon, and lemongrass.
Specifics on the pomme fruit blend:

About Durham Cider + Wine: From San Luis Obispo on California's Central Coast, cider maker Rob Durham makes low-intervention ciders, utilizing nature's generosity through natural fermentation and allowing the fruit to speak for itself. It is their belief that within the imperfections, cider, wine, and life become perfect. Fruit grown following nature's lead is very important to Durham's low-intervention style - all of the vineyards, orchards, ranches, and farms they work with are worked organically or beyond. They spend many hours in the orchards planting, observing, studying, and caring for fruit trees all while focusing on soil regeneration.
