Farmstead Cider - Choke Cherry Cider (750 mL)
Farmstead's Choke Cherry Cider is a special, small-batch release from Farmstead that is the outcome of an experiment in utilizing an intriguing native species - the Choke Cherry.
Not your standard cherry cider.
Long used by Native American cultures, the choke cherry bush is a fairly ubiquitous plant found throughout the American west. It's fruit are small and nearly 70% seed pit. This makes it difficult and time consuming to get the yields to craft a cider, but for Farmstead's undaunted cider makers this posed little challenge. Now after sufficient aging has occurred, this delicious unique violet nectar is ready to be enjoyed!
Naturally fermented in oak with locally foraged crabapples. Aged on the lees before bottling. No added sulfites.
Tasting Notes: Gorgeous blush color. Semi-dry. This highly refreshing cider boasts and excellent balance of a touch of sweetness, fruitiness from the berries, tartness from the apples, and a nice acidity. Lovely fruity notes of raspberry, and cherry. Light oaky quality, and gentle creaminess from the time spent on lees. Mouth watering finish.
About Farmstead Cider: Farmstead Cider was founded because the many decorative crab apple trees growing in backyards around the Jackson Hole community were becoming a problem. The apples on the ground would ferment and attract wildlife of all kinds to feast on these sweet treats Unfortunately, when someone steps out of their front door and sees a bear munching away on boozy apples, that can lead to a major problem for both the person and the bear. Farmstead's solution? Remove the apples! Then they discovered how wonderful many of those high-altitude crab apples are for making hard cider. Farmstead now harvests apples all around Jackson Hole, helping to protect wildlife and apple trees while making small-batch hard ciders that reflect their wild home. Farmstead's ciders are fermented to dry using wild/native yeast, often with some oak barrel aging, and without any added sulfites or any other refining agents. Natural cider. Save Bears, Drink Cider!
