Farmstead Cider - Teton Pet-Nat Cider (750 mL)
Farmstead Cider - Teton Pet-Nat Cider (750 mL)
Farmstead Cider's Teton Pet-Nat is a sparkling dry cider made from a base of Newtown Pippin apples and a blend of crab apples foraged from near the Grand Tetons in Wyoming.
This cider stylistically borrows from the French wine making tradition Pétillant Naturel (Pét Nat). It is made by bottling the cider just before it goes dry, allowing it to finish fermentation under pressure in the bottle. This provides the carbonation for a bright, refreshing cider, while the lees (spent yeast) in the bottle adds body and gentle creaminess. This simple process preserves the apple essence without any secondary fermentation, blending, or other fancy tricks. This smooth hazy cider delights the mouth and the spirit. Wild fermented, with no residual sugars or added sulfites.
Tasting Notes: Dry and slightly tart with prominent notes of green apple, apple skins, and a slight doughiness to it. Supporting notes of dried pineapple and candy lemon. A crisp minerality cleans the palate and leaves a pleasant crabapple linger. Drinks very much like a fresh, sparkling Spanish cider for folks who are lucky enough to have traveled to Asturias or Basque Country to drink the fresh stuff from Spain.
About Farmstead Cider: Farmstead Cider was founded because the many decorative crab apple trees growing in backyards around the Jackson Hole community were becoming a problem. The apples on the ground would ferment and attract wildlife of all kinds to feast on these sweet treats Unfortunately, when someone steps out of their front door and sees a bear munching away on boozy apples, that can lead to a major problem for both the person and the bear. Farmstead's solution? Remove the apples! Then they discovered how wonderful many of those high-altitude crab apples are for making hard cider. Farmstead now harvests apples all around Jackson Hole, helping to protect wildlife and apple trees while making small-batch hard ciders that reflect their wild home. Farmstead's ciders are fermented to dry using wild/native yeast, often with some oak barrel aging, and without any added sulfites or any other refining agents. Natural cider. Save Bears, Drink Cider!
