Haykin Cider's Front Range Méthode Ancestrale is a special, limited release from Haykin. Each year we travel to CiderCon - the cider industry's national convention - where we have the opportunity to mingle with many of the best cider makers from around the U.S. As you might imagine, there are several bottles shared throughout the week - and this Front Range cider from Haykin was a standout amongst standouts.
Named Front Range in honor of the cider orchards Haykin works with from Colorado's Front Range region, where hundreds of heirloom cider apple varieties are grown - most of which are represented in this bottle. Apples grown at Masonville Orchards, Three Trees Orchard and foraged apples. Bottled as a Pet Nat, then aged for 42 months sur lie (meaning on the fine lees, or spent yeast that remains in bottle).
Tasting Notes: The result is a flavor profile that is soft and refined. Incredible aromatics sparkle out of the glass with notes of fresh bittersweet apples, soft butterscotch, lime zest, a bit of honey and hay. It is slightly off dry, but the touch of sweetness is cut through quickly by the lively sparkle and tannins. Juicy acidy (medium-plus) and soft tannins (medium) in great balance. Flavor notes of apple skins, stone fruit (nectarine and peach), pear drop, meyer lemon, and a slight hay note are all in harmony at the front of the palate. Finishes dry with a long linger of acidity, light lemon, minerality, fresh rain, and clean phenolics. Exceptional stuff.
Methode Ancestrale (a.k.a. Pét-nat or Pet Nat) is the world's oldest method for making sparkling ciders and wines. The process involves bottling prior to fermentation, at just the right time with enough unfermented sugars still remaining in the juice. Once bottled, this cider was allowed to age for 42 months sur lie (meaning on the yeast that remains in the bottle after it's done fermenting) before disgorging (releasing the yeast from the bottle). The final fermentation happening in bottle allows for a lively sparkling cider, and the time spent aging on the yeast adds complexity to the body and flavor of the cider.
