Raging Cider's Reserve Pommeau is a five-year barrel aged pommeau made from a blend of Hyslop Crabapples, Golden Delicious, and Newtown Pippin apple juice - all lightly fermented then blended with Raging's solera method apple brandy.
The apple brandy is distilled from Raging's own cider each year and the new vintage's (harvest season's) brandy is blended in with the previous vintage(s) on a continuous basis. This pommeau features an apple brandy with more than 4 years worth of brandy being blended and aged together in the solera method.
The brandy was blended with the lightly fermented juice blend, and then was then barrel rested for 5 years. Collectively between the brandy vintages and barrel aging of the pommeau blend, this bottle is 10+ years in the making. The result is an absurdly lush dessert cider with a touch brighter notes than Ragins's West Coast Pommeau - yet all the baked, spiced apple notes, a far smoother finish, and tongue coating vanilla on the finish.
This is best enjoyed at room temp poured over a cube of ice as an aperitif, digestif, or as a decadent indulgence.
About Raging Cider & Mead Company: Head cider maker Dave Carr makes a range of excellent cider, perry, mead, wine, and coferments in partnership with his family at their San Diego based cidery. Their ciders are all made with locally sourced fruit and honey from San Diego County - very rare amongst cideries in the area, most of which primarily use juice brought in from near and far. Dave and his family forage apples and pears and help manage several orchards throughout San Diego County. The many mountains and canyons just east of San Diego on the way to Julian, California are an abundant source of interesting fruit. The unique growing conditions of these mountains often result in higher levels of acid as well as higher sugar content (and thus higher alcohol). Dave uses natural fermentation methods (wild fermentation via native yeast) on the fruit for all of his ciders. Between the cidermaking style and the unique qualities of the fruit, these small batch ciders are all one of a kind.
