Raw Cider Company's Cat LaRoux Perlant is a semi-dry, Pet Nat style cider made from a blend of more than 20 different cider-apple varieties grown by Cat LaRoux Orchards in Oregon's Willamette Valley.
This single-orchard blend of heritage apple varieties with roots in Spain, France, and England. The blend consists of: Collaos, Kingston Black, Puget Spice, Wickson Crabapple, Bramtot, and Binet Rouge apples. Crafted with French cidermaking techniques, it undergoes native fermentation, developing gentle natural effervescence and a balanced sweetness directly from the fruit.
Raw Cider's founder and head cidermaker, Levi Danielson, makes this cider annually - though each vintage is unique relative to it's last based on the available fruit from Cat LaRoux. (Fun side note: Many apple varieties are biennial in nature, yielding much larger crops every other year).
This cider is made from fruit grown during the 2024 harvest season. Bottled in June, 2025, and allowed to mature until it's release in late 2025. Bottled prior to fermentation completing, the final bit of fermentation occurring in bottle resulting in a natural carbonation (Pet Nat method). The Perlant style is one of a very soft, effervescent bubble.
