Raw Cider Company's Kossah Farms Semi-Sweet is made exclusively from apples grown at Koosah Farms outside Amity, Oregon. The orchard’s philosophy of plant and microbial diversity fosters tree health, minimizes intervention, and expresses a terroir unlike any other.
This blend consists of Harrison, Wickson Crabapple, Marie Menard, Karmijn de Sonneville, and Goldrush apple varieties. Fruit from the 2022 harvest. The cider was wild fermented (natural fermentation via the native yeast living on the fruit), then aged on the lees (spent yeast) for 24 months. Bottled under cork & cage using the Traditional Method (aka Method Champenoise), yielding fine bubbles and depth of character.
Both a dry and semi-sweet version of this cider are available. This semi-sweet batch was naturally filtered using methods akin to the French keeving process for cider making, which stopped the fermentation prior to it going completely dry. The result is an exquisite cider with medium sweetness. Aromatics of toasted brioche and honey. It has a silky texture with delightful notes of citrus zest and lemongrass. Serving Suggestions
Serve well-chilled (45°F). Pairs beautifully with citrus vinaigrette salads, fresh cheeses, or enjoyed on its own in celebratory moments.
