South Hill Cider's Chisel Jersey is a single-varietal cider featuring the Chisel Jersey apple - a bittersweet cider apple original from Somerset, England where it has been beloved by cider makers for generations. A beautiful example of a Keeved cider.
This cider is made in the traditional French and English keeving method to achieve a naturally semi-dry cider with elegant tannic structure and a refined bubble. Keeved ciders are traditionally made by consistently racking (transferring) the cider between barrels or tanks during fermentation, leaving behind the most active yeast each time. This process starves the yeast and halts the fermentation prior to the cider finishing dry. The bit of residual sweetness plays perfectly with tannic apples like the Chisel Jersey.
This cider undergoes a long & slow 180 day fermentation after a cold maceration. It was bottled before fermentation finished to create a Pet Nat sparkling cider.
Tasting Notes: On the nose this is very reminiscent of a French cider with nice complexity - rich, fresh apple notes supported by hints of black cherry, hay, pencil shavings, tobacco, and minerality. Semi-dry with medium-plus tannins and acid in perfect balance. Juicy up front with notes of apple skins, apple butter, and zesty lemon and lime notes. The mild sweetness at the front of the palate is washed away by very nicely integrated tannins and acidity. Left behind on the end of the palate is a crisp apple and mineral quality, white flower, and a soft orange peel and dark cherry note. An excellent example of what magic keeving can bring to a cider: refined sweetness, a softened tannic structure, and a fine carbonation deeply integrated into the cider
About South Hill: South Hill Cider is located in Ithaca, in the Finger Lakes region of Upstate New York - an area highly regarded for it's orchards and vineyards, and one of the premier cider making regions in the U.S. All of the apples used in South Hill's ciders are organic; most are now grown on their own orchard - though they still source fruit from other nearby orchards, as well as a few wild growing trees they forage fruit from. Their ciders are all naturally / wild fermented using the native yeast living on the fruit and in the cidery. South Hill makes an excellent mix of dry to semi-dry ciders, mostly sparkling plus a few of our favorite still ciders, and some of the best pommeau (apple mistelle) made in America. Head cider maker Steve Selin is a long time musician - many of their ciders have a name that pays homage to his musical roots.
