South Hill Cider - String Theory (750 mL)
South Hill Cider's String Theory is a semi-dry sparkling cider made from a blend of Dabinett, Chisel Jersey, Geneva Tremlett's, and Granny Smith apples. This cider is naturally wild fermented, slowly over 7 months, and then bottled just prior to fermentation being complete in the Ancestral Method (also known at Pét Nat) for a natural sparkle. Aged in bottle for several more months.
This is the 2023 vintage of this cider (harvest year), released in 2025. We visited South Hill's cidery in the Finger Lakes in the summer of 2025 and tasted through ciders to determine what to order for our shop. While all of their ciders are great - this String Theory vintage was a stand out. Delicious stuff! Rich, textured, wild-fermented, intensely balanced.
String Theory takes its name from both the contemporary physics model that explains supersymmetry and from the support of many traditional metaphysical worldviews including Biodynamics. It is also is a nod to musicianship and its relation to the origins of South Hill Cider, and to the string music that the cidermaker plays to the fermentations.
About South Hill: South Hill Cider is located in Ithaca, in the Finger Lakes region of Upstate New York - an area highly regarded for it's orchards and vineyards, and one of the premier cider making regions in the U.S. All of the apples used in South Hill's ciders are organic; most are now grown on their own orchard - though they still source fruit from other nearby orchards, as well as a few wild growing trees they forage fruit from. Their ciders are all naturally / wild fermented using the native yeast living on the fruit and in the cidery. South Hill makes an excellent mix of dry to semi-dry ciders, mostly sparkling plus a few of our favorite still ciders, and some of the best pommeau (apple mistelle) made in America. Head cider maker Steve Selin is a long time musician - many of their ciders have a name that pays homage to his musical roots.
