Zapiain's Bizi-Goxo is an Ice Cider from the Basque Country in Spain. This cider is made by fermenting the juice pressed from apples that have frozen on the tree. The frozen apples result in a high concentration of the sugars, acidity, and complexities of the apple varieties. A beautiful balance of sweetness, juicy acid, and bold flavor notes.
This special release from Zapiain is made from a single cider apple variety - Errezile, aka Errezil Sagarra - a late ripening Spanish cider apple, rich in sugars and acid. Historically, this variety has been stored on a straw bed in the ganbaras (barns) of Zapiain's farms. It has the ability to last all winter, losing water and wrinkling in a natural process of concentration and without rotting.
Serving & Tasting Notes: Best served chilled (slightly warmer than fridge temps) a few ounces at a time. Although considered a dessert cider, its sweet-and-acidic balance makes it a versatile beverage, working perfectly as an aperitif. Thanks to the concentration of sugars, the resulting product has a higher alcohol content and is sweet. It is elegant, with hints of caramel apple, candied fruit, some notes of fig with hints of compote and touches of raisin. Silky, full-bodied with hints of candy. With an electric freshness provided by the acidity and citrus notes. It has a long, full, and creamy finish.

About Zapiain Sagardotegia: The Zapiain family has an interesting piece of evidence of how far cider-production runs throughout their history - a fine from the city of San Sebastian delivered to Juanes de Zapian for untaxed sale of cider in 1595. Years later in 1961, Nicolás Rosario Zapiain Agirregabiria, decided to leave the livestock business and focused fully on the production of Sagardoa (Basque Cider), working to build a cellar with 22 chestnut foeders. Today, Zapiain is among the 3 largest and most-storied producers of cider in Basque Country and a producer of award-winning Spanish cider.
