Pommus is a cider from Cold Hand Winery (Denmark) is made in the traditional method (champagne method), with fruit that's frozen after harvesting which amplifies the aromatics, acidity, and alcohol of the finished cider.
Made with a blend of three apple varieties: Elstar, Ingrid Marie, and Jonagold. The fruit is harvested and pressed at optimal ripeness and then frozen. Upon thawing, the juice is cryo-concentrated, significantly enhancing the acidity, sweetness, and especially the aroma. The concentrated juice is then spontaneously fermented and fermented completely dry before being bottled in champagne bottles for a secondary fermentation. Finally, the wine is hand-turned in champagne racks and disgorged.
The ideal accompaniment to fish and shellfish, poultry, etc.
This is the 2013 vintage of this cider (fruit harvest year, released nearly 2 years later) - and it's held up quite well. Aromatics bounce out of the glass - notes of candied pear and tropical aromas. It drinks semi-dry to semi-sweet, with balanced medium levels of tannin & acidity. Tannic bitterness washes away the acidity. A bold, heavy-bodied slow sipper - drinks like a dessert wine. Flavor notes of honeycomb, apple butter, canned pear, twig. A bit buttery and dusty, in an appealing way.
