Presque Isle Farm Cider's MUSE is a continuation of PIF's pusuit of the smoky, leathery, and rich phenolics of West Country English style ciders.
Made from a blend of UK and American cider apple varieties: 50% Bulmer’s Norman, 15% Kingston Black, 10% Ruby Mac, 10% Harrison, 10% Golden Russet, 5% Ashmead’s Kernel, Baldwin, Newtown Pippin. Started as a spontaneous fermentation with the native yeast from the fruit, aided by the addition of some wine yeast. Fermented in neutral french oak barrels.
Tasting Notes: The result is a dry cider with medium-plus to high tannins and supporting acidity. Tropical and peach notes on the nose. Overly ripe apple notes, some smoke and leather. Grippy tannins on this cider carry the palate with supporting flavor notes of lemon & lime peel, green apple, and peach.
About PIF Cider: Presque Isle Farm (pronounced: Preh-sk Aisle) is a fantastic cidermaker from Northern Michigan. Located on the shores of Lake Huron in the Northeast corner of Michigan's Lower Peninsula, PIF is a labor of love owned & operated by Dion & Molly Stepanski - partners in business and in life. The cidery was launched as an extension of their growing organic farm in Alpena, Michigan. PIF's focus is on English style cider - made with apples sourced from small farms across northern Michigan. They use a combination of cider-specific apple varieties, classic American apples, and wild foraged apples. Their cidermaking process focuses on minimal intervention and naturally fermented ciders. PIF's ciders are made in the traditional English and New England style and focus on cider-specific apples that can bring a complexity equal to wine.
