Haykin Cider's Northern Spy is made from 75% Northern Spy apples grown by Uncle John's Cider Mill in Michigan, blended 25% with Golden Russet apples. An exceptional cider, one of our favorite releases from Haykin the past couple years (which is saying something, as so many of their releases are exceptional).
This cider drinks semi-dry, with a loverly mouthwatering acidity (medium-plus) and light but balancing tannins (medium to minus). Delightful fresh apple and pear notes up front, with chewy light tannins, dried pineapple, and light lemon notes riding the acidity through the mid-palate and the finish.
Northern Spy is a very old American apple that fittingly grows well in cold, northern climates like Uncle John's in Michigan. It is tart and refreshing, boasting notes of clementine, peach, and fresh rain.
