Eric Bordelet's Sidre Tendre is an elevated, semi-sweet cider great for special occasions, food pairings, or for anyone who loves a slightly sweet cider. Absolutely excellent stuff from one of the best cider makers in all of France.
Cider made from a blend of biodynamically-grown French heirloom apples. Apples are harvested by hand, and each variety is processed individually. After pressing, fermentation begins using indigenous yeasts, and the must is racked several times to both clarify the juice and slow down fermentation (in other words, keeved). Made with the same blend as the Sidre Brut Tendre, but bottled with a small amount of residual sugar, resulting in a semi-sweet well-balanced cider.
Tasting Notes: Full-bodied, with fresh apple juice notes. Fantastic sweet cider. Layered qualities of bittersweet cider apples. A fresh apple and honey quality on the front of the palate. Notes of floral honeysuckle, soft citrus, candy peach, peaer drop, and fresh pulled taffy. A soft minerality helps dry out the finish.
Pairs well with roasted vegetables.
