South Hill Cider - Sunlight Transformed (750 mL)
South Hill Cider's Sunlight Transformed is a cider & wine coferment made by fermenting Dabinett apples on Cabernet Sauvignon skins (from Sheldrake Point Vineyard - a winery on the west shore of Cayuga Lake in the Finger Lakes region of Upstate New York, just north of South Hill's cidery). The Dabinett apples are grown on South Hill's estate orchard. The Fresh Dabinett juice is used to rehydrate the grape skins, which are co-fermented using the wild, ambient yeast from the fruit.
Tasting Notes: Aromas of grass, pastry dough, apple skin, grapefruit zest, rose, and anise. Complex and full bodied with some apple forward sweetness up front supported by a strong tannin rush that comes on mid palate.
Opens with red grape skin, black currant, rose, and a fruity juiciness, followed by notes of apple skin, and soft red grape that quickly turns to drying tannins with a floral bitter finish with hints of twig/apple stem.
About South Hill: South Hill Cider is located in Ithaca, in the Finger Lakes region of Upstate New York - an area highly regarded for it's orchards and vineyards, and one of the premier cider making regions in the U.S. All of the apples used in South Hill's ciders are organic; most are now grown on their own orchard - though they still source fruit from other nearby orchards, as well as a few wild growing trees they forage fruit from. Their ciders are all naturally / wild fermented using the native yeast living on the fruit and in the cidery. South Hill makes an excellent mix of dry to semi-dry ciders, mostly sparkling plus a few of our favorite still ciders, and some of the best pommeau (apple mistelle) made in America. Head cider maker Steve Selin is a long time musician - many of their ciders have a name that pays homage to his musical roots.
