Alpenfire's Burnt Branch Series is mostly reserved for their own Cider Club members and for pouring at their orchard based tasting room in Port Townsend on the Olympic Peninsula. This cider is a first on many levels for Alpenfire. It's a single-variety cider made 100% from Bulmers Norman apples - a variety they hadn't previously worked with. Bulmers Norman is an English cider bittersweet apple variety beloved in the cider world for its floral flavors, mild sweetness and astringency. It's also Alpenfire's first keeved cider. Keeving is an almost magical method for producing cider, traditionally used by both English and French cider producers. This true-to-style keeved cider is sweeter than most of Alpenfire's ciders. Simply put, Keeving is a process to preserve sweetness, build carbonation and add clarity without pasteurization, adding sugar, chemicals, or CO2. To accomplish this, Alpenfire removed nutrients from the juice during fermentation. They did this via biomass reduction utilizing pectins naturally found in apples.
Tasting Notes: The result is a delightful, slightly sweet cider. The sweetness is offset by a nice tannic quality (medium-plus). Flavor notes of fresh pressed apple juice, and apple skin - like biting into a fresh apple - with a flush of tannins and tropical melon, guava, candy peach, and sweet pear. Enjoy!
About Alpenfire Cider: Alpenfire was one of Washington State's first commercial cideries when they opened in 2006.
