Christian Drouin's Cidre Brut Grande Cuvée is hand crafted with an eye towards prolonged aging. The 2013 vintage refers to the year in which the fruit was harvested. Using a blend of 10 different french cider apple varieties, including Mettais, Domaine, Fresquin, Binet Rouge, Rambau, Bedan, Saint Martin, Moulin à Vent, Clos Renau and Ameret. This blend of apples provides layered tannins and acidity that provide the cider with enough structure to age beautifully.
The apples are stored for 2-3 weeks prior to being pressed. Fermentation was done under temperature control and with several rackings, an intensive process traditional to many Normandy ciders which allows for precise control over the levels alcohol and residual sweetness. After filtration, the cider was naturally re-fermented in the bottle, giving it a bright sparkle.
After bottling, Chrstian Drouin ages each vintage of their Brut Grande Cuvée for at least 3 years, only releasing it when they believe it's reached the right level of complexity and balance. The cider has continued to gain complexity with time in the bottle.
