Julien Thurel - Solstice Cidre Extra Brut
Julien Thurel - Solstice Cidre Extra Brut
Julien Thurel's Cidre Solstice Extra Brut is a fine, tannic, particularly vinous, beautiful envelopment of the palate. This cider has long aromatics, concluding with a delicate saline note.
Solstice is blend of three apple varieties: 50% Petite Saulette Grise, 30% Sébin and 20% Avrolle apples. The apples are hand harvested over the course of multiple pickings to ensure that only perfectly ripe fruit is used. The fruit is cold macerated prior to being pressed into juice, then fermented naturally via native yeast. Bottle conditioned and aged for over a year on fine lees.
This cider is the most dry of the Julien Thurel offerings, which will perfectly complement your shellfish or fish dishes, roasted white meats, or platters of cheese.
One of the highest quality French cider & perry producers available in the U.S., Julien Thurel ciders have been on our wish-list for years - we're thrilled to finally have them in stock. We're pleased to now work directly with an import partner who is helping us get more labels from Julien Thurel. Some of which are available in extremely limited quanity, so this specific cider isn't eligible for discounts (except for our Cider Club member discounts).
About Julien Thurel: Julien Thurel has been making foraged and organically farmed pear and apple ciders since 2012. He has devoted much time to researching local apple and pear varieties, selecting the ones best suited to his native clay, limestone and silex soils. A perfectionist and nativist, Julien is driven by a mission to find the best local varieties that would lead to delicate yet aromatically complex ciders worthy of aging. Julien specializes in rare, heirloom varieties of apple, pear and quince native to the Pays Gâtinnais and Sancerrois regions of the Loire region in France. Julien grafted and planted his orchard himself and while his pear trees and youngest apple trees mature, he continues to forage fruit from sites he has been studying for years. His orchard is certified organic and biodynamic. All his fruit is hand harvested, pressed in a high quality pneumatic press, and all the ciders are made in the Traditional Method (a.k.a. Method Champenoise). Some of the absolute best French Cider and Perry available in the U.S.
