Pacory - Poiré Domfront French Perry (750 mL)
Tasting Notes: A beautiful example of single-varietal, traditionally made poiré. Suitable or drinking any time of day, as this 4% ABV perry is traditionally throughout Normandy. Semi-sweet, which is cut through by the sparkle and acidity, so drinks more like semi-dry. Very balanced with a noticeable but soft level of acidity and tannins. Flavor notes of fresh pear, pear drop candy, tart acidity, hay, and a slight earthiness (twig, orchard floor). Finishes pretty dry.
About: This traditional French Perry is made with 100% Poire de Blanc, from massive pear trees more than 100 years old. True to French Poiré traditions, the pears are collected after they've ripened and fallen to the ground, then are stocked in wooden boxes for 36 hours to mature even further. The un-clarified juice is cooled for several days to develop further aromas. The tanks return to normal temperature and the pear juice ferments using its natural yeasts for 3 months. After several rackings, the poiré is stored upside down in bottles with crown caps, and not disgorged.
Perry (known in France as poiré) has been produced in Normandy for the local markets for hundreds of years. In the 11th century, pear trees were already planted in Normandy when cider-making apples first arrived from Spain. The area surrounding the city of Domfront in France is home to orchards that are unique in Europe, with more than 100,000 pear trees, close to 100 varieties, and an average annual production of 25,000 tons of perry pears used exclusively for the production of French Perry (Poire).
In the 1990s, a handful of producers decided to work together to promote poiré and to protect the local landscape. An AOC (Appellation d'Origine Contrôlée) was formed in 2002 that protects the quality and origins of the product. AOP/AOC means that production is in accordance with specified criteria: 1) to only use specific varieties of poiré pears; 2) that the fruit is collected at maturity after falling from the tree rather than being picked; 3) slow, natural fermentation without the addition of agents to influence the yeast’s work; 4) 100% natural carbonation in the bottle (the addition of CO2 is forbidden); and 5) pasteurization is not permitted.
