Cidre Basajuan from Domaine Bordatto is a traditional Basque style cider from the French side of Basque Country.
The Pays Basque (Basque Country) is nestled in the Pyrenees mountains close to the Spanish border in Southwest France. The region boasts a unique language and distinct culture. Specific to cider - their apple varieties, production, flavor profile, and cider drinking culture is much more akin to the Basque Country in Spain than it is to French Cider.
About the Cider: This dry (brut) cider is made from a blend of 15 local varieties of apples, selected according to ripeness (ondo motxa, eri sagarra, anisa, gordin xuri, minxuri, azau sagarra, eztirotxia, geza xuria, mandoburua, patzulua). The fruit is all grown on the Domaine Bordatto estate, cultivated organically and biodynamically. Pressed directly, varieties separated, cleared then fermented in stainless steel vats for about 4 months. Fermented exclusively using indigenous (native/wild) yeast cultures. Lees stirred by hand during fermentation and aging. Bottled in the Pet Nat method, carbonation occurs naturally in the bottles for 2 months (the fermentation finishes in the bottles without adding liquid sugar or yeast).
Dried fruit aroma with some pear-apple fragrance. The long finish is slightly bitter and is quite refreshing. It goes well with cold meats (chorizo and ham), as an aperitif or with some hazel nuts, walnuts or chestnut. Perfect to quench the thirst of a hot afternoon.
'Basajuan' (pronounced "Bah-sha-dwan") translates to "Lord of the Woods" or "The Wild Man" in Basque mythology. Basajuan was a huge, hairy hominid dwelling in the woods. They were thought to protect livestock, and teach skills such as agriculture to humans in the region. They were said to inhabit the forests of Mount Gorbea (in Spanish Basque Country) and Irati, a forrest on the western slopes of the Pyrenees mountants.
About Domaine Boardatto: The Domaine Bordatto was established in 2001. Started by Pascale and Bixintxo Aphaule - young farmers who started from scratch to find the land, invest in equipment from pairs of shears to the tank room, the tractor and the press. What began out of their love for all things wine and for their country became a life‘s work and obsession. They rediscovered their agricultural inheritance and old local fruit varieties. They naturally adapted to work as organic farmers, and produce and drink a quality cider that tells a story about the land and the fruit. The wine from AOC Irouleguy "Lurumea" (The young of the land in Basque) is from a small and old parcel of vineyard, worked according to organic regulations. Domaine Bordatto is a six-hectare estate within this region. The estate includes 3.5 hectares of apple orchards and 2.5 hectares of vines, cultivated organically and biodynamically, enhancing both the sustainability and disease resistance of the fruit. .
