Liberty Ciderworks' Franklin is a single-varietal, dry cider made 100% from Franklin apples. Discovered in 2008 as a chance seedling in northern Vermont, the Franklin apple is a rare American bittersharp, offering substantial tannins providing greater body and mouthfeel. Impressively fruit-forward on the nose and palette, with pronounced acids and astringency. This cider was fermented using native/wild yeast. Fermented slowly for six months before barrel aging for a year. Limited release from Liberty Ciderworks' Reserve Series.
Tasting Notes: This cider is dry with medium-plus to high levels of both tannins and acidity. Bold yet balanced, and tannin-forward. Flavor notes of apple skin, fresh apple juice, and a slight twiggy apple-stem like note. Tart green apple and lemon juice on the mid palate with a citrus peel finish.
