Eden's Specialty Cider's Cinderella's Slipper is a natural cider - as low-intervention in process as possible, and a true "taste of place". Made with a blend of several cider apple varieties grown on their home orchard, this cider is spontaneously fermented with natively occurring wild yeast living on the fruit. No additives, racking, or filtering. Bottled still with no added carbonation. The cold climates of Vermont means the fruit has lots of acidity, and the fermentation in the colder month of October results in a low & slow fermentation that preserves a lot of the fruit flavors. The resulting cider has deep apple character that makes a fantastic dinner wine

From Eden Cider: Producing this cider is the equivalent of asking the fruit from our Eden orchard to sing an Aria without orchestral accompaniment on the main stage at the Metropolitan Opera. There is no place to hide. Whatever that fruit provides is how the cider turns out. No pitched yeast, no nutrient, no racking, no carbonation, no added sulfites. Our cold climate means the fruit has lots of acidity, and ferments in cold October temperatures. Both of those features mean that spoilage organisms are mostly discouraged, and the resulting cider has deep apple character that makes a fantastic dinner wine.
