Eden's Specialty Cider's Stoke Red is a single-variety cider made from Stoke Red apples, a classic English Bittersharp variety. This cider is full bodied, with deep fruit notes and rich tannins. Just a tad sweet, with tannic astringency that provides lively mouth feel and refreshing bitterness.
Stoke Red is a classic English bittersharp variety with a perfect tannin/acid balance. The fruit is small, red striped over yellow, and slightly flat. The white flesh is tinged red, soft, and juicy. Eden showcases this iconic variety with this beautiful, minimal intervention cider. The juice was pressed on Eden's 19th century rack and cloth press, the juice began spontaneous fermentation in their cellar, and it was bottled before primary fermentation finished. The fermentation nearly stopped, and it has taken nearly 3 years to develop the natural carbonation level and full fruit character that Eden was looking for.
Chill upright in your fridge overnight before opening. and serve with ripe soft cheeses, roasted meats or kabobs, or an earthy eggplant and mushroom ragout.
Tasting Notes: Aromatics are really nice - notes of ripe apple, slight butterscotch, and barrel - plus a bit of barnyard. Very lightly petulant / almost still. Semi dry and rich juiciness which lends to perception of some sweetness. Medium plus tannins and acidity in great balance with the touch of sweetness. Flavor notes of ripe bittersweet apple, fresh apple juice, red apple skins, candied lemon peel, strawberry, peach, bright citrusy notes and refreshing minerality cut through the sweetness. Fresh apple juice quality lends sweetness. Finishes dry with some soft phenolics, barrel notes and tannins that linger in finish.

METHOD: Spontaneous fermentation. Bottled during primary fermentation. Not disgorged. Aged 33 months in bottle.
