Keepsake Cidery's River Valley Reserve Dry is a blend for the cider makers and cider lovers out there. Made from a blend that's roughly 2/3 bittersweet and bittersharp apples, and 1/3 of Chestnut Crab and Keepsake - two Minnesota founded varieties, including one for which Keepsake Cidery is named after. Other apples making up a nice portion of the overall blend include Dabinett, Chisel Jersey, Elis Bitter, Bulmer's Norman, and Major. Each vintage is slightly different, depending on what the orchards give them. Most years there is both this Dry version of the cider, and a Semi-Dry/Semi-Sweet version (available here).
This Dry version of River Valley Reserve cider is spontaneously fermented with no filtration, and no added sulfites. Bottled in the Pet Nat method. A very nice cider that drinks dry with medium-plus tannins and medium acidity in nice balance. Juicy apple notes, with citrusy and tropical flavors playing a supporting role. Soft minerality and light phenolics.
As with all of Keepsake's ciders, this is made without anything added or anything removed - the only ingredient is the apples.
Pairs with: Charcuterie, soft & earthy cheeses, shellfish, smoked duck, baked ham, mushrooms, cheeseburgers, fried chicken, grilled cheese.
About Keepsake Cidery: From the Cannon Valley in Minnesota, Keepsake makes some of the finest ciders in the Midwest. Named after the Keepsake apple, which was developed locally by the University of Minnesota's Horticulture program. Head Cidermaker Nate Watters makes a range of dry-to-sweet ciders with fantastic character and flavor profiles - clearly inspired by great English ciders. Made using cider apple varieties grown on their own orchard and procured from other local farms in the area - most of which are organically grown. All of the ciders are fermented naturally with the native yeast living on the fruit, and without any additives (no added sugar, nutrients, sulfites, etc.).
